-Caramel Apple Cake-
3 eggs
2 cups white sugar
1 cup cooking oil
2 teas. vanilla
3 cups flour
1 teas. soda
1 teas. cinnamon
1 teas. salt
1 cup chopped nuts ( optional)
1 cup raisins
3 cups diced apples
Carmel Sauce (below)

Preheat the oven to 350 degrees F. In a large bowl, cream together
the first 4 ingredients. Add the rest of the ingredients and stir until moist.
Batter will be stiff. Put in a 9x13 inch cake pan. Bake at 350 degrees for 45 minutes.
When cake is just warm to the touch, take a wooden spoon (handle side down) and
poke holes into the cake, about 1 inch apart. Pour 3/4 of a cup of the carmel sauce
over the cake. Chill for several hours before serving. Serve with whipped cream.
