1 cup butter, softened
1/2 cup sugar
2 tsp vanilla
2 cups all-purpose flour
1/4 tsp salt
About 4 dozen pecan halves
1 egg white
1 Tbsp water
About 1 1/2 cups sweetened flaked coconut
Heat oven to 350 degrees F. Mix butter, sugar and vanilla. Stir in flour and salt. (If dough is soft, cover and refrigerate until firm enough to shape.)
For each cookie, shape 1 tsp dough around pecan half (cut very large pecan halves in two) to form 1-inch ball.
Beat egg white and water with fork. Dip balls into egg white mixture, then into coconut. Place on ungreased cookie sheet. Bake until light brown, 14 to 15 minutes.
Store in tightly covered container.
About 4 dozen.
