Paleo (from "paleolithic), and the general idea of a Paleo diet comes from the premise that the human body has not completely adapted to processing food types that weren’t around or available 10,000 years ago. It's believed that greater than 72% of foods eaten by humans today were not available to humans in the Paleolithic era.  Today, we put so huge amounts of processed food into our systems, most of which is unhealthy.  Recent advances in cultivation, agriculture, and mass production of food has caused humans to move away from whole and natural foods; foods meant for humans to keep our bodies in natural working condition.
