Set your chops through the charcoal and let them sear for 1 1/2 or 2 minutes on the primary side then turn and sear the other side. (Use tongs for turning-don't pierce having a fork)



Now comes the tricky section of grilling an ideal chop magic. They have to be cooked just until done! Overdone and you've wasted your entire time.
