When you start sharpening the knife, consider the placement of knife closely as it has to be in the right slot. Always begin with the heel area and go to the tip as this is a safe pattern. The slot has to hold the blade in the right angle, so make sure that you angle up the knife to enable the stone contact the blades. Do not go in for more than two passes. With two passes, you will be able to reshape and sharpen a dull knife.
You have to repeat the same process on different stones keeping the pace and energy concentration intact. The moment you feel that you are tired, take a break and come back. Once you are done with the knife sharpening phase, you have to move to another important area that includes rinsing and drying. Before you begin to use the knife, make sure that it is thoroughly rinsed in the sink as this would assure that there are no shavings. Once done with the rinsing, soak the knife using a towel and you are ready to go cutting.
