CHUCK'S ROAST ON THE GRILL

Venison haunch or fresh pork shoulder
2-3 onions, sliced
2-3 bell peppers, sliced
Garlic salt and black pepper
Lowry'sŪ seasoned salt
6 strips bacon
1-1/2 sticks butter for venison.
(Pork will need little.)
2 six-packs beer
Cooler with ice
Lawn chair

Ice down beer in cooler placed next to grill.
Place lawn chair next to cooler.
While drinking first beer, light grill and line large pan with doubled heavy-duty aluminum foil.
Criss-cross two doubled, 3' pieces of foil in pan and line bottom of pan with onion and pepper rings.
Top with 3 strips bacon.
Season roast and place on bacon and vegetable bed.
Bring foil partly together and pack onions and peppers on sides and top of roast, top with the other 3 strips of bacon.
Dot with butter and seal foil tightly.
Place pan on grill, set on lowest heat.
Close grill cover, sit in lawn chair and cook until drunk.
About every other beer, baste roast with pan drippings, and give the roast a little splash of beer.
Be sure to re-seal foil tightly.
When the beer is almost gone, open foil and allow roast to brown.
Scrubbed and quartered potatoes may be added about half-way through the second six-pack, or serve with:

CHUCK'S SUPER NUKED POTATOES

Scrub potatoes and prick with a fork.
Spray with butter-flavor Pam and sprinkle liberally all over with garlic salt.
Nuke as usual.
This recipe is best prepared and eaten in the In-field at Daytona.
In that case, more beer, a larger cooler and more lawn chairs will be required.

The backyard is a suitable substitute, especially if there is a football game on. But in this case, some early preparations must be made.
1) Set up TV in garage.
2) Set up grill outside garage door.
3) Proceed as above.

The beach is good, too.
In that case add an air horn to the ingredients.
This is used as needed to scare off stray kids and hungry beach bums.
