These pancakes are so good, try them at least once as recipe is written.. Very high in fiber and very good tasting! Whole Wheat Apple Pancakes2 eggs1 3/4 cup milk 1/4 cup oil 1/2 tsp vanilla 2 tbls honey (optional) 3/4 cup all purpose flour* 3/4 cup whole wheat flour* 1/4 cup wheat germ (optional**) 4 tsp baking powder 1/2 tsp salt 1 med shredded apple 1/2 tsp cinnamon 1 cup finely chopped walnuts (optional) In a large bowl, combine eggs, milk, oil, honey and vanilla, set aside. In a smaller bowl, combine flours, wheat germ, baking powder, cinnamon and salt, combine throughly. Add dry ingredients to wet, than add apple and nuts. Combine until slightly lumpy. Bake on slightly greased (I use a bit of butter), preheated griddle until edges are dry and middle is bubbly. Turn once. Will keep in preheated over (250 degrees) until all batter is used up. *If you would like, you may substitute whole wheat pastry flour for both flours, pancakes will be heavier. **Use whole wheat flour instead of wheat germ in desired But the wheat germ adds a wonderful texture.
