On a serious note folks.
This particuar recipe means alot to me,
(I was so happy that my husband found it!)
It was given to me by a dear friend of mine who recently
passed on after a drawn out struggle with various illnesses.

Cream of Tomato Soup
1 large onion, chopped
3 tsp butter
1 carrot, chopped
1 rib celery, chopped
10 ripe tomatos, cores removed
1/2 tsp salt
1 tsp sugar
dash black pepper (white pepper works well too)
1 cup milk
2 tsp cornstarch
2 tsp chopped parsley
1/2 tsp dillweed (optional)
Saute onion in butter until tender.
Add carrot and celery.
Continue cooking several minutes.
Stir in tomatos, salt, sugar and pepper.
Cook over medium heat, stirring occasionally, until vegetables are tender.
Place in Blender container, blend 30 seconds.
(puree or blend speed, which ever your blender has)
Strain through to remove seeds (cheesecloth works well)
Return to saucepan.
Meanwhile, in a med sized bowl, stir milk into cornstarch until smooth.
Add one cup tomato mixture to milk mixture gradually, stirring until well combined and uniform in color.
Add milk mixture to remaining tomato mixture in saucepan, stirring constantly.
Bring to a boil over med heat and boil one minute.
Just before serving, add parsley and dill (if desired).
Makes about 5 cups.
