Mexican Wedding Cookies
1 cup butter or margarine 2 teaspoons vanilla 2 cups all purposes flour 1 cup finely chopped almonds or pecans (I use pecans) 1/4 teaspoon salt powdered sugar Preheat oven to 375. In a large bowl, combine 1/2 cup powdered sugar, vanilla and butter or margarine, blend well. Stir in flour, nuts and salt until dough holds together. Shape into 1 inch balls. Place 1 inch apart on an ungreased cookie sheet. Bake for 15 to 20 minutes or until set but NOT brown. Remove from cookie sheet immediately and roll in powdered sugar. Cool completely and roll again in powdered sugar. Makes about 4 dozen cookies and fingers get nice and gooey!!
