Pitzels

10 cups of flour
2 Tbsp. baking powder
1 tsp. salt
2 cups sugar
4 sticks margarine, melted and cooled
1 bottle (2oz) lemon extract
12 eggs, well beaten.

1.Melt margaine.
2. Mix dry ingredients together in a large bowl or on the table.
3.Make a well in the dry ingredients and add the liquids, melted margarine, eggs and extract.
4.Mix well together, if necessary add a little more flour, dough should be soft not sticky.
5.Shape into size of walnuts.
6.Cook in pitzel iron, either electric one or over flame with old fashioned cast iron pitzel iron.

Hints: If you squeeze the iron closed and fasten clamp you will have a thin cookie.
If you just bring the iron closed, with a finger width between top and bottom you will have a nicely raised cookie.
Cookies are done when lightly browned.
Depending on size of dough, this makes over 100 cookies.

Note: This recipe can be halved
