Submitted by LBortman![]() Cashew Brittle1 Cup Sugar1/2 Cup White Corn Syrup In 1 1/2-qt. casserole stir together sugar and syrup...then Microwave on High 4 Minutes. Add: 1 Cup roasted, salted Cashews Stir in Cashews and Microwave on High 4 1/2 Minutes. (or until light brown) 1 teaspoon butter 1 teaspoon vanilla Add butter and vanilla and blend well. Microwave on High 1 1/2 minutes. 1 teaspoon baking powder Remove syrup concoction from Microwave and stir in the baking powder...it will bubble and foam up. Spread it as best you can...let cool and break into small pieces and store in air-tight container. Makes about 1 lb! ![]() |
