Cashew Brittle

1 Cup Sugar
1/2 Cup White Corn Syrup

In 1 1/2-qt. casserole stir together sugar and syrup...then Microwave on High 4 Minutes.

Add: 1 Cup roasted, salted Cashews
Stir in Cashews and Microwave on High 4 1/2 Minutes. (or until light brown)

1 teaspoon butter
1 teaspoon vanilla

Add butter and vanilla and blend well. Microwave on High 1 1/2 minutes.

1 teaspoon baking powder
Remove syrup concoction from Microwave and stir in the baking powder...it will bubble and foam up.

Pour mixture onto a lightly greased cookie sheet
Spread it as best you can...let cool and break into small pieces and store in air-tight container. Makes about 1 lb!

Note: As you can see...the prep time is 0 and the cooking times add up to 9 1/2 minutes in all...a real winner!
