Spinach Dip

My kids call this "the boat". I have been making this for over 10 years now, and it can be found in many different cook books. My kids love it, and I always have to make it on New Year's eve. This and hummous. YUM!

1 cup mayonnaise
1 cup sour cream
1 pkg. dry veggie soup mix (I prefer Knorr's)
1 can water chestnuts, chopped
1 pkg. frozen spinach, chopped, thawed and squeezed
1 red onion, finely chopped 2 loaves french bread

Mix ingredients together. Cut top off of l loaf of bread, lengthwise of course! Dig out the bread carefully, and pour the dip into the bread shell.
Use the soft bread to dip, and I also cut up another loaf for dipping. When the dip is gone, the kids love to eat the boat!



Cocktail Spread

from "Grand Slam" in the "Best of Bridge" cookbooks. This is soooo yummy!

8 oz. cream cheese
1/2 cup sour cream
1/4 cup mayonnaise
3-4 oz. tins broken shrimp, rinsed and drained
1 cup seafood cocktail sauce
2 cups mozzarella cheese, grated
3 green onions, chopped
1 tomato, diced
1 green pepper, chopped

Mix first 3 ingredients together. Spread in a 12' dish or pie plate. (I have even used a 12" pizza plate). Scatter shrimp over cheese mixture. Add layer of seafood sauce, then mozzarella cheese, green onions, tomato and green pepper. Cover until ready to serve. Serve with crackers.
