Chocolate Oatmeal Cake

This recipe is from "Cakes" in the "Company's Coming" series of cookbooks. It is easy to make and my kids love it. They think that because it has eggs and oatmeal they should have it for breakfast!
1 cup boiling water
1 cup oatmeal
1/2 cup butter or margarine
2 eggs, beaten
1-1/4 cups brown sugar
1 tsp. vanilla
1 cup all purpose flour
1/4 cup cocoa
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Preheat over to 350 degrees. Pour boiling water over oatmeal and butter in a mixing bowl. Let stand 10 minutes. Stir occasionally.

Stir in eggs, sugar and vanilla.

Stir remaining ingredients together in small bowl and add to oatmeal mixture. Mix well. Pour into greased 8" X 8" pan. Bake for 30 to 40 minutes.

*** I double this recipe and bake it in a 9" X 13" pan, so it makes a nice big cake. I have 3 sons, so the smaller cake would last about 5 minutes. The bigger one lasts about 10 !!



Lemon Squares

I can't remember where I got this recipe, but I have been making them for years. They are my son Mark's favourite.

1/2 cup butter
1/4 cup icing sugar
1 cup flour
2 eggs
1 cup sugar
1/4 tsp. salt
3 tbsp. lemon juice
1/2 tsp. baking powder
2 tbsp. flour

Blend together the first 3 ingredients. Press intoa 8" square pan and bake 20 minutes at 350 degrees.
Beat eggs, salt, sugar and lemon juice. Add flour and baking powder. Spread on warm base. Return to oven and bake for 30 m inutes at 350 degrees. Cool and cut into squares. Sprinkle with icing sugar.



Oatmeal Chocolate Chip Cookies

Another kids' favourite!

1 cup margarine
1 cup brown sugar
1 cup white sugar
2 eggs, beaten
2 tbsp. water
2 tsp. vanilla
1 1/2 cups flour
1 tsp. baking soda
1 tsp. salt,br> 3 cups rolled oats
1 cup chocolate chips

Cream margarine, sugar and eggs together. Add water and vanilla. Add dry ingredients, rolled oats and chocolate chips. Drop by spoonful on greased cookie sheet. Bake at 375 degrees for 12-15 minutes. Cool slightly before removing from pan.
