Buttermilk Waffles with Banana-Caramel Sauce
Waffles:
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
1/2 cup butter, melted
2 large eggs
vegetable oil
Banana-Caramel Sauce:
1/2 cup sugar
water
1/2 cup heavy cream
2 tablespoons butter
2 bananas, thinly sliced
Preheat oven to 275F degrees. Set rack on baking sheet and place in
oven. In medium bowl, whisk together flour, sugar, baking powder,
baking soda and salt. Set aside.
In large bowl, whisk together buttermilk, butter and eggs. Add flour
mixture and mix just until combined.
Heat waffle iron and brush with oil. Pour batter onto iron, leaving
a border on all sides. Close iron and cook until waffles are golden
brown (3 to 5 minutes). Transfer to rack in oven to keep warm.
Repeat with remaining batter.
In large skillet, heat 1/2 cup sugar with 2 tablespoons water,
stirring to dissolve sugar. Boil (without stirring) until golden
brown (5 to 8 minutes). Immediately add 1/2 cup heavy cream and 2
tablespoons butter. Cook and stir until smooth. Add bananas and
stir to coat.
Serve waffles topped with banana-caramel sauce, as desired.
