Each includes a handy meal preparation countdown, with make-ahead tips where possible.

Traditional Christmas Dinner
for eight

Mulled Cider
Butternut Squash Bisque
Maple-Glazed Ham with Pineapple Doughnuts and Raisin Sauce
Yankee Succotash
Fluffy Mashed Potatoes
Buttered Brussel Sprouts
Creamed Beans and Onions
Assorted Relishes
Lemon Caraway Muffins
Colonial Cranberry Pie
Pumpkin Steamed Pudding with Rich Butterscotch Sauce
Hot Coffee
Cordials


Up to one month ahead:
Prepare Pumpkin Steamed Pudding and Lemon Caraway Muffins, then put them in the freezer after labeling and dating them.



The day before:
Bake Colonial Cranberry Pie and store it at room temperature.
Parboil the beans and onions for Creamed Bean and Onions
Trim and wash Brussel sprouts for Buttered Brussel Sprouts.
Dice the bacon and onion for Yankee Succotash.
Make and freeze Pineapple Doughnuts.
Prepare Butternut Squash Bisque through Step 2, then cover and refrigerate.



At party time:
Roast Maple Glazed Ham .
Make Rick Butterscotch Sauce.
Prepare Yankee Succotash, Fluffy Mashed Potatoes, Buttered Brussel Sprouts and Creamed Beans and Onions.
Reheat and glaze Lemon Caraway Muffins.
Bake Pineapple Doughnuts.
Make Raisin Sauce.
Heat and complete Butternut Squash Bisque.



During dinner:
Reheat Pumpkin Steamed Pudding, then Colonial Cranberry Pie and the Rich Butterscotch Sauce.
Prepare the coffee.

Christmas Morning Brunch
for ten



Blend of Tangerine Juice and Cranberry Juice Cocktail
Continental Fruit Compote
Baked Sausage and Bacon
Creamy Scrambled Eggs
Marbled Waffles , Syrup
Pumpkin Muffins, Butter
Kugelhopf Coffee Cake
Cocoa with Creme de Menthe
Cafe au Lait
Milk



Up to three months ahead:
Bake and freeze Pumpkin Muffins and Kugelhopf Coffee Cake



The day before:
Prepare and refrigerate the oranges for Continental Fruit Compote
Blend and refrigerate juices.



Early in the day:
Make the batter for Marbled Waffles
Combine the eggs, seasonings and the cream for Creamy Scrambled Eggs



At party Time:
Make coffee for Cafe au Lait
Place the oranges for Continental Fruit Compote in a dish and top with plums
Bake the Baked Sausage and Bacon, then reheat Pumpkin Muffins and Kugelhopf Coffee Cake. Keep warm.
Make Marbled Waffles. Keep warm.
Meanwhile, make Creamy Scrambled Eggs and heat the water and milk for drinks.
