Golden Rice   serves 6 (total fat-1.49 grams)
1 cup long-grain rice 1 Bay leaf
1 cup homemade Chicken Stock ¼ teaspoon salt (optional)
1 cup water ¼ teaspoon ground turmeric or ½ teaspoon saffron
1 cinnamon stick 2 tablespoons slivered almonds

Rinse rice in several changes of water before cooking. In a 2-quart saucepan over medium-high heat, bring chicken stock and water to a boil. Add rice, cinnamon, bay leaf and salt; stir. Reduce heat and simmer, covered, 20 minutes. Add turmeric or saffron and stir lightly with a fork. Continue to cook, covered, over low heat, another 10 minutes, or until rice is tender and liquid is absorbed. Remove cinnamon stick and bay leaf. Sprinkle with almonds and serve hot. ENJOY
