Karen’s World Famous (almost) Cheesy Creamed Onions


INGREDIENTS:

  1. 3 tablespoons butter
  2. 3 tablespoons all-purpose flour
  3. 1 cup milk or cream
  4. 1/2 - 1 lb cheddar cheese
    (more or less)(the sharper the better - yum)
  5. 4 jars pearl onions
I start with a basic white sauce using the first three ingredients:

DIRECTIONS:

  1. In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more milk depending on desired consistency. After that is cooked, I put it aside and start cooking the rest of the sauce.
  2. I used jarred white boiling onions, but if you want to go to the hassle of peeling those little critters, be my guest, just cook until soft and save the liquid. If you open the jars, save the liquid and cook until reduced in a pan. Put the onions in a buttered casserole dish. I used almost 4 full jars this year.
  3. Pour some of the onion juice into the white sauce, and add cheddar cheese. I usually add about a pound. If you grate it, it will melt faster.
  4. Cook on low heat stirring constantly. Once the cheddar cheese has melted in, pour over the onions.
  5. Top with dried bread crumbs and drizzle with butter (or top with fresh bread crumbs and drizzle with butter if desired) (I did fresh bread crumbs this year and didn’t drizzle).
  6. Bake at 350 degrees for 20 – 30 minutes.

If you don't like cheddar, substitute your favorite cheese for the cheddar.
