Potato Soup
This is a good cheap soup. Add some carrots if you have any, and any other vegetables you might have around the house. This is a real "stone soup" type recipe and really can taste good with anything you have.
1 medium onion, minced
3 stalks celery, minced
2 tablespoons oil
10 cups water
6 large potatoes, diced
1 tablespoon salt (or to taste...i.e. needs more salt)
1 teaspoon paprika
In a large soup pot, satue the onion and celery in the oil for 10 minutes. Add the remaining ingredients, bring to a boil, and lower the heat to a simmer. cook for 1.5 hours, stirring often. If the soup gets to thick, add more water.
Variations:
Make the Potato soup and add 4 cups green beans at the same time the potatoes are added
Or, make the Potato Soup and add 1 lb. spinach, diced large for the final 5 minutes. It's better if the spinach is barely cooked.
