Corn Bread



I have made this recipe countless times. It is excellent for when you want/need bread and are broke, or can't get to the store. It's quite cheap to make and is very tasty. There are several variations on the recipe that can be interesting to make. You can basically add anything to the recipe you want, experiment!

3/4 cup corn meal or corn flour
1 cup flour
3 tsp baking powder
1 tsp salt
1/4 cup oil
1 cup water or soymilk
Preheat oven to 350. Mix all ingredients and place in a hot oiled skillet. Bake for 25 to 30 minutes or until golden.

Variations:

Jalapeno Corn Bread: add 2 to 3 tablespoons of shredded jalapeno peppers, or other hot peppers (I have used Habanero peppers, and they are good, but beware they are hotter than jalapenos).

Onion Corn Bread: Add to the Corn Bread 1/2 cup sauteed chopped onions.

Corny Corn Bread: Add 1/2 cup corn kernels to the Corn Bread before it's baked.
