Chocolate Zucchini Bread

(2 loaves)

3 eggs

1 c. vegetable oil

2 c. sugar

1 Tbs. vanilla extract

2 c. shredded peeled zucchini

2 ½ c. flour

½ c. unsweetened cocoa powder

1 tsp. salt

1 tsp. baking soda

1 tsp. ground cinnamon

¼ tsp. baking powder

In a mixing bowl, beat eggs, oil, sugar and vanilla. Stir in zucchini. Combine the dry ingredients; add to the zucchini mixture and mix well. Pour into two greased 8x4x2” loaf pans. Bake at 350 degrees for 1 hour or until bread tests done.
