Apple-Nut Muffins

( makes 1 dozen)

1 egg

¾ c. milk

½ c. vegetable oil

1 medium apple, chopped

½ tsp. ground cinnamon

2 c. flour

1/3 c. brown sugar

3 tsp. baking powder

1 tsp. salt

topping ( recipe follows )

Heat oven to 400 degrees.

Grease bottoms only of about 12 medium muffin cups. Beat eggs, stir in milk, oil, and apple bits. Stir in remaining ingredients ( except the topping ) just until moist. Fill muffin cups ¾ full. For Topping: mix together ¼ c. brown sugar, ¼ c. chopped nuts, and ½ tsp. ground cinnamon. Sprinkle topping on top of each muffin. Bake until golden brown for about 20 minutes. Remove from pans immediately after baking.
