Italian Food

Here are a few of our Favourite Italian dishes. Some have been put together as serving suggestions. How you serve them is to your individual taste.

Spagetti Bolognaise

Serves 4
1 lb Minced beef (hamburger)
1 Medium diced onion
1 Large can Whole peeled tomatoes (32oz)
2 Tbsp Tomato puree (tomato paste)
1 Beef Oxo cube (3 cubes beef boullion)
2 Cloves crushed garlic
1 Tbsp Oil
Pinch black pepper
Serving suggestion: Pour over either Spagetti, Angel hair, tagliatelli noodles or Jacket potato.

In large saucepan, fry minced beef, onion and garlic in the oil until browned. Add can of tomatoes, puree, pepper and crumble in beef cubes. Bring to the boil then let simmer for 35-40 minutes, stirring occassionaly. Then serve.

Tri-Tip Roast

Serves 4
1/2 cup fresh lime juice
1/2cup chopped fresh cilantro (corriander)
1/2 cup olive oil
1/3 cup soy sauce
7 garlic cloves, finely chopped
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon black pepper
tri-tip roast (2 lbs)

Whisk first 8 ingredients in a medium bowl. Using small sharp knife, pierce meat all over. Place meat in resealable bag add marinade. Seal bag and refrigerate at least 2 hours.
Prepare barbecue to medium-high heat. Remove roast from bag. Grill meat to desired doneness, about 15 minutes on each side for medium. Cut diagonally across the grain.

Dean's Famous Mashed Potato

Serves 4
5 Medium Potatoes
8 oz (1 cup) Grated Cheddar Cheese
1 teaspoon Garlic salt or ½ teaspoon Garlic powder
4 oz (½ cup) Diced Onion
2 Tablespoon Butter
½ Cup Milk

Peel and Cut Potatoes, add to a pan of boiling water. Let cook until potatoes are soft, approx. 20 minutes. Drain water. Add butter and milk, mash until smooth. Add garlic salt/powder, cheese and combine. Finally, mix in onion and serve.

5 Cheese Lasagna

Serves 8
Lasagna Noodles
8 oz Ricotta Cheese
8 oz Cottage Cheese
1/2 cup Parmesan Cheese
1 cup Cheddar Cheese
1 cup Motzarella Cheese
1 tsp Oregano
1 tsp Garlic Salt
1/2 tsp Basil
1/2 tsp Thyme
1/4 cup chopped Parsley
SAUCE
32 oz can of diced tomatoes
1 medium diced Onion
1 tsp Oregano
1/2 tsp Basil
1/2 tsp Thyme
2 cloves crushed Garlic
Pepper to taste

To make sauce, in a large pan combine tomatoes, onion, and spices, simmer for 30 minutes.
To make filling, combine cheeses, spices, and parsley in a large bowl.
Oil a 9x13 pan, put a layer of Lasagna noodles on the bottom, spread 1/2 the cheese mixture over noodles. Add second layer of noodles and the other 1/2 of the cheese mixture. Add third layer of noodles and top with sauce. Bake in oven at 400°F (200°C) for 35-45 minutes. Let set for 5 minutes and serve.

Anti-Pasta Salad
Serves 4
1 Head of lettuce
1/4 cup diced onion
20 slices of peperoni
1/2 cup of garlic and herb fetta cheese
5 sliced peperoncinis
5 mushrooms sliced
1 cup large croutons
1 bottle of Italian Dressing

Chop lettuce to desired size add: onion, peperoni, fetta cheese, mushrooms, and croutons and toss. Add Italian dressing to taste and serve.
