Melissa's Spinach Casserole


I recently found this recipe in a new cookbook, and I just love it! It's very quick and easy and delicious! Also try it the next day as sandwhich filling.

Ingredients:

cooking spray

2 large eggs

1/3 cup unbleached all-purpose flour

1-1/2 cup low-fat cottage cheese

1 (10-ounce) package frozen chopped spinach, thawed and very well drained

1/2 to 1 cup (2 to 4 ounces) grated sharp Cheddar cheese

1/2 to 1 cup (2 to 4 ounces) grated mozzarella cheese

1/4 teaspoon salt


Preheat the oven to 350 degrees. Spray a deep-sided 2-1/2 to 3 quart baking dish with cooking spray. In a medium bowl, combine all the other ingredients, stirring well. Turn the mixture out into the prepared baking dish. Bake, uncovered, for 1 hour, until slightly crusty on top. Let cool for a minute or two and serve, still hot.
