Asian Tempeh Stir-Fry


This is one of my mad scientist creations. Tempeh is a soy product made of fermented soy beans. I know it sounds odd but it really is good! I am fairly new to tempeh but have found it very easy to use and satisfying.

Ingredients:

1 block tempeh, frozen or thawed

veggie assortment, any variety

1 tablespoon garlic powder

4 tablespoons soy sauce

2 tablespoons peanut oil + 1 tablespoon, reserved

2 tablespoons olive + 1 tablespoon, reserved

1 tablepoon cold water


Steam tempeh until heated through. Slice into small cubes and set aside. Combine soy sauce, sesame oil and garlic powder. These amounts may be adjusted according to taste. Marinate tempeh for 5 minutes, coating well. Heat olive and peanut oil in a skillet to high temperature. Add tempeh and sauce and saute until slightly crispy. Remove tempeh and discard extra sauce. Add reserved oil to skillet and heat. Add vegetables and cold water. Stir rapidly until heated through and slightly tender. Add tempeh and stir to mix. Remove from heat and serve. May be served alone or with rice, noodles or couscous. These can be mixed in with tempeh at the end and stirred well.
