Cinnamon-Spiced Bananas

2 large bananas

2 tablespoons brown sugar

1/4 teaspoon ground cinnamon

2 teaspoons margarine

1/2 teaspoon vanilla extract

2 cups ice cream

 

Slice 2 large bananas; place banana in a 1-quart microwave-safe casserole. Sprinkle 2 tablespoons brown sugar, 1/4 teaspoon ground cinnamon, and 1/2 teaspoon vanilla extract over bananas; dot with 2 teaspoons margarine. Cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 1 to 2 minutes or until sugar melts, stirring once. Spoon 1/2 cup ice cream into each of four individual bowls; spoon banana mixture evenly over ice cream. Serve immediately.

Yield: 4 servings.
