Chicken With Peaches And Rice

This is SO lovely!!! It absolutely is a wonderful meal! You can use turkey if you like, it's just as good, and my best friend said that it's also very good when you use lean pork chops too - so use what you want - the dish is fabulous!

1 can (16 ounces) peaches in light syrup, cut into bite-size pieces

2 boneless, skinless chicken breasts, cooked

2 cups cooked white rice

Salt and pepper to taste

In a small pot, simmer peaches with juice, uncovered, over medium heat for 15 minutes, until slightly reduced. Slice prepared chicken into bite-size pieces. In a medium serving dish, combine the chicken, rice and peaches. Season as desired with salt and pepper.
