Sweet Potato Casserole

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 29 ounces sweet potatoes, canned -- mashed 1/4 teaspoon ground allspice vegetable cooking spray 3 tablespoons light cream cheese 2 tablespoons brown sugar 1 tablespoon margarine 1/3 cup crushed pineapple -- drained 1/4 teaspoon salt 3 tablespoons pecans -- toasted, chopped
Combine sweet potato and allspice in a mixing bowl. Beat mixture at medium speed of and electric mixer 2 mins. or until smooth. Spoon into a 1 quart microwave safe baking dish coated with cooking spray. Cover and microwave at HIGH 5 mins. or until thoroughly heated. Add cheese, sugar, and margarine to sweet potato mixture. Beat at medium speed until combined. Stir in pineapple and salt. Microwave, uncovered, at HIGH 1 minute or until mixture is thoroughly heated. Sprinkle with toasted pecans, and serve warm.
