               Dates Stuffed with Cream Cheese & Cointreau

  3               cups  pitted dates -- *see Note-frozen
     3/4         pound  lowfat cream cheese
     1/2           cup  grand Marnier
  2              whole  orange zest
Blend cream cheese and cointreau in processor. Leave at room temperature for 2 hours.
Make a slit lengthwise in each date and return to the freezer.
Shortly before serving, arrange dates on serving dish. Pipe the cream cheese mixture 
into them. Garnish with the orange rind. Cover with plastic and refrigerate.

Note: I haven't made in ages, but boy, is it good! Dates Stuffed with Cream Cheese 
and Cointreau! It is from an old catering cookbook. I've made it with Grand Marnier 
instead of Cointreau and it's even better! I've made them in advance and thought 
they tasted even better the next day (but keep refrigerated).
Betsy's Notes: Used Grand Marnier. I thought the cream cheese mixture needed 
something to cut the very "boozy" taste. I added probably 3/4 c of powdered sugar.
