                        Ingredible Quesadillas

     1/2           cup  cheese -- Reduced fat Mexican Blend, shredded
  4                     fat-free flour tortillas -- 8 inch
  4                     sausage links, meatless -- or low fat, coarsely chopped
  2        tablespoons  salsa -- well drained
  1              small  red onion -- sliced and separated into rings
  2        tablespoons  fresh cilantro -- snipped or 2 Teaspoons dried
     1/2           cup  salsa
                        tomatillos -- optional
Preheat a waffle baker to a medium-high heat setting*. Sprinkle two Tblsp of the 
cheese over half of each tortilla. Top with sausage, the well-drained salsa, onion 
and cilantro. 
Fold tortillas in half, pressing gently. Place 1 quesadilla on pre-heated waffle 
baker. Close lid, pressing slightly. Bake for 3 ro 6 minutes or until tortilla is 
lightly browned and cheese is melted. Remove from waffle baker. Cut quesadilla in 
half. Repeat with remaining quesadillas.
Serve with remaining salsa and optional tomatillos.
(*or use a 10 inch nonstick skillet to cook each quesadilla over medium heat for 3 
to 4 minutes or until golden brown. Using a spatula, turn quesadilla over. Cook 2 to 
3 minutes more or until golden brown. Remove Quesadilla from skillet.)
