Cook's Corner

This month, I would like to send along some recipes that the children might enjoy. Some of these could be made by the children themselves, with maybe just a little supervision from Mom or Dad.

Some of the recipes might tempt the little ones for breakfast, lunch, dinner or perhaps a healthy snack.

With school about to begin for some and many already in class...the children will need a good breakfast, hopefully one you will not have to beg them to eat before they go off to school each morning

~Frog In A Hole~

Take a piece of bread and tear a hole out of the middle.
Put it in a frying pan then take an egg and break it into the hole and break the yolk.
Then fry it in a little butter as you would French toast and serve with syrup.

~Piggies & Pancakes~

Cook little piggy sausages.
Wrap a pre- cooked pancake around them, and freeze them, and store in a plastic bag.
Then when you need one ,just put it in the microwave to heat.
Put a little syrup in a bowl and let them dip....Fun and delicious.

Italian Bread

Cut a loaf of Italian or French Bread in half lengthwise. Cut a small slice off the rounded top so it will lay flat when turned upside down.
Open the bread up so the insides are facing up and spread both halves with garlic butter.
Spread with homemade or store-bought pizza sauce. Add a layer of cheese, then meat & or Veggies and another layer of cheese.
Place on cookie sheet and bake at 375 to 400 until its hot and bubbly.

~Fruit Smoothie~

Strawberries, and / or bananas, or whatever fruit you prefer, nonfat milk, sugar or honey to taste, maybe a little vanilla too, and a couple of ice cubes in the blender.
Great for an after school snack.

~Pita Pocket~

Cut pita rounds in half and fill each pita half with egg salad, tuna salad, or ham salad.
For variations, add chopped celery, grated carrot or chopped pickle to the salad the children prefer.
Tomato and lettuce may also make an easy snack in the pitas.

~Easy Tacos~

1 16 oz. can Chile
1 package of taco shells
1/2 cup cheese, shredded

Heat tacos according to package directions. Heat Chile , stirring often.
Fill taco shells with 2 tablespoons Chile and 1 tablespoon cheese.
Optional - add chopped tomatoes, chopped onion, chopped lettuce, or salsa.

~Snap~Crackle~Pop....Chicken~

1 (3 pound chicken), cut into serving pieces
1 stick margarine
3 cups Rice Krispies cereal

Coat chicken in melted margarine, roll in Rice Krispies.
Bake in greased pan for 1 hour at 350, or until done.
It is not necessary to turn chicken.
