
1 pound shrimp, shelled and deveined
1/2 lb. angel hair pasta
4 TBLS olive oil
2 c. chicken broth
1 medium onion, chopped
4 cloves garlic, minced
2 c. fresh baby spinach
2 medium tomatoes, chopped
Cook pasta according to directions. Set aside. Heat oil in skillet. Sautee onion & garlic for 3 minutes. Add Shrimp. Sautee 4 more minutes. Add tomatoes and spinach. Cook 2 minutes. Add chicken broth, cover, simmer 5 minutes. Serve over pasta.
