Italian Sausage Soup

Ingredients:
1lb. Italian sausage (can use turkey sausage)
2 large russet potatoes, cut into 1 inch chunks
1 large onion sliced
1 28oz. can crushed tomatoes
1 to 2 cups water
3T. fresh snipped basil
Pepper to taste
Topping:
1 cup shredded mozerella cheese

In large dutch oven place sausage, potatoes, onions and tomatoes.
Add enought water to cover, and bring to a boil.
Stir in herbs, cover and simmer till potatoes are tender, about 20 mins.
Slice up sausage and return to pot.
Sprinkle fresh basil into soup bowl, serve soup, and top with shredded cheese.
Serve with fresh Italian bread for a hearty meal.



Yankee Bean Soup

2 to 3 large ham hocks
6 c. water
1 large onion
3/4 t. salt
1/2 t. dried thyme
1 bay leaf
3 ribs celery chopped
3 med. carrots chopped
1 T. minced garlic
1 large baking potatoe, peeled and cubed
4 c. small white beans
Place meat, water, onion, salt, thyme and bay leaf in 5 -6 quart pot.
Bring to a boil, reduce heat, cover & simmer 1 hr.
Add celery, carrots, potatoes and garlic.
Cover and simmer 15 min.
Remove meat and bay leaf. Reserve meat.
Add beans to pot and simmer uncovered 15 mins.
Scoop 2 c. soup into a bowl, mash and return to pot.
Remove meat from bones, chop and return to pot.
Serve hot with crusty bread for a hearty meal.



French Onion soup

3 cans beef broth
1 can beef consumme
1/4 c. port wine
6 large onions sliced thin
1/4 c. butter
Salt & Pepper to taste
1 c. Grated gruyere cheese or
1 c. Grated mozerella cheese
1 loaf french bread
Slowly saute thinly sliced onions in butter, until golden. (about 8 mins.)
Combine beef broth, consumme and wine in large pot.
Heat over medium heat and add cooked onions.
Reduce heat to low, and simmer, covered 30 mins.
Meanwhile combine cheeses, and slice french bread.
Toast french bread in 375 degree oven till browned, and crisp.
Ladle soup into crocks, top with slice of toasted bread and
generously cover with cheese. Place under broiler appoximately
1 min. till cheese melts and is golden.
