Picnic Coleslaw

6 c. shredded cabbage
2 c. shredded carrots
8 strips bacon, cooked and crumbled
12 green onions with tops, thinly sliced
1/2 c. cider vinegar
1/3 c. vegetable oil
1/3 c. sugar
1 t. salt

In a bowl, combine cabbage, carrots, bacon and onions.
In a jar with a tight-fitting lid, mix vinegar, oil, sugar and salt.
Shake well. Just before serving, pour dressing over cabbage mixture and toss.



Potatoes Au Gratin

4 lg. baking potatoes, peeled and sliced
1/3 c. butter or margarine, melted
1 lg. clove garlic minced (optional)
Salt and Pepper to taste
2 T. grated Parmesan cheese
1 T. fine dry bread crumbs
1/8 t. paprika

Arrange about 1/3 of the potatoes in bottom of shallow 2 qt. casserole.
Mix butter, garlic, salt and pepper; drizzle about 1 T. over potatoes.
Repeat twice with remaining potatoes and butter mixture.
Mix cheese, bread crumbs and paprika, and sprinkle over the top.
Cover tightly with foil. Bake in preheated 400 degree oven 40 mins.
Remove foil; bake 20 mins. longer or until potatoes are tender,
and top is browned. Makes about 8 servings.



Cheddar Scalloped Potatoes

3 1/2 lb. baking potatoes (10 cups)
*about 7 large, peeled and sliced 1/8 in. thick
4 oz. cheddar cheese, shredded (1 cup)
1/2 c. sliced scallions
2 T. flour
3 c. milk
Salt and Pepper to taste

Heat oven to 350 degrees. Grease a shallow 3qt. baking dish.
Layer half the potatoes over bottom of prepared dish.
Sprinkle with half the cheese, scallions, salt and pepper.
Cover with remaining potatoes. Whisk flour and milk together.
Pour evenly over potatoes. Sprinkle with remaining cheese,
scallions, salt and pepper. Bake uncovered 1 hour.



Puffed Brocolli-Cheese Casserole

1 can condensed cream of brocolli soup
1 soup can of milk
1/4 c. flour
2 c. shredded cheddar cheese (8 ozs.)
4 large eggs, seperated (whites brought to room temp)
1 pkg. (10 ozs) frozen chopped brocolli, thawed
drained and squeezed dry

Heat oven to 350 degrees. Lightly grease oblong baking dish.
Mix soup, flour, and milk in 3 qt. sauce pan till blended.
Stir over med-high heat until almost boiling.
Remove from heat and add cheese. Stir till melted.
Stir in egg yolks and brocolli till blended. Cool slightly.
Beat egg whites in med. bowl till they form stiff peaks.
Fold into brocolli mixture.
Pour into prepared dish.
Bake 50 mins. till top is golden and puffy.



Broccoli Bacon Salad

1 large bunch broccoli, seperated into florets
1 sm. red onion, coarsley chopped
10 to 12 strips bacon cooked, drained and crumbled
Dressing:
3 T. white vinegar
1/3 c. mayonnaise
1/3 c. sugar

In a large bowl, combine the brocolli, onion and bacon. Set aside.
In a mixing bowl, combine the dressing ingredients.
Just before serving, pour dressing over salad and toss.
