Baked Fish -Dana: A Front Porch Chef
Ingredients:Directions:
1-1 1/2 pounds of fish
1/3 cup olive oil
1/4 cup dry white wine
1/2 cup fresh chopped parsley
3 Tbsp. lemon juice
1 clove garlic minced or pressed
salt and pepper to taste
1 medium tomato diced
1/2 cup bread crumbs
parmesan cheese
Brush some of the olive oil on the bottom of the tin foil.
Mix remaining oil with wine, parsley,
lemon garlic, salt and pepper.
Sprinkle diced tomato over the fish
and then pour oil and wine mixture over the top.
Sprinkle with bread crumbs and parmesan cheese.
Cook for about a half an hour until fish flakes with a fork!!

No Peek Chicken -Jan:A Front Porch Chef
Ingredients:Directions:
1 1/4 cups white rice
2 cans cream of [your choice] soup
either regular or fat free
1 soup can of milk
chicken (frozen breasts, fresh quartered, etc., but bigger pieces, not chicken strips)
1 packet of dry onion soup mix.
Mix white rice with soup and milk
Pour in 13x9 glass baking dish.
Top with chicken
and sprinkle with onion soup mix
Cover with tin foil and bake at 325 degrees for 2 hours.
Do not lift foil until you are ready to eat.

Ingredients:Directions:
Base:
2 tsp. margarine
6 eggs
1/2 tsp. salt
dash of pepper
1/2 c. grated Swiss cheese
Filling:
1/2 c. diced ham or bacon
1 c. mushrooms
2 tsp. chopped parsley
2 tsp. chopped onions
2 tsp. chopped peppers
Preheat broiler.
Beat eggs with salt and pepper.
Stir in grated cheese and filling.
In a heavy ovenproof, 10-inch skillet,
melt margarine over medium heat.
Add egg mixture and lower heat.
Cook undisturbed until bottom
is golden brown when edge is lifted.
Put skillet 6 inches under source of heat in
broiler for 30 seconds or until top is golden brown.

These are extremely tender and I get many compliments when I make them for company.

Meatballs -Carole: From the Idea Exchange
Ingredients:Directions:
1 1/2 lbs. of lean ground beef
1/2 cup crackers, crumbled
(can be saltines, ritz, most any plain tasting cracker)
1 to 2 Tbs. Worcestershire sauce
1/4 tsp. dried basil
1/4 tsp. dried oregano
1 egg white
Put all ingredients into a bowl and mix.
Shape meat into 1" to 2" balls
and bake at 375 degrees for about 20-25 minutes.
This recipe also works great for meatloaf, just vary the amounts.
