Easy Eggplant Parmesan -Andi: A Front Porch Chef
Ingredients: Directions:
1 medium eggplant, thinly sliced
1 medium onion, sliced thinly
1 jar of your favorite spaghetti sauce
1 pkg, 16 oz., mozerella cheese, or Italian cheese blend.
Preheat oven to 350 degrees F
Layer in greased casserole dish, in this order... one layer of eggplant,
one layer of onion slices, one layer
of cheese, pour sauce over layers.
Repeat layers again.
Top with remaining sauce and cheese.

Bake for 50-60 minutes, covered.

Serve with garlic bread and salad.
Can be made in advance and refrigerated overnight.

Nutburgers in Pitas -Andi: a Front Porch Chef
Ingredients: Ingredients: cont.
3 cans garbanzo beans, rinsed, drained, and mashed or pureed
1 medium red onion, finely chopped
1/2 bunch parsley, finely chopped
1/2 c. chopped almonds- 2 oz.
1/2 c. chopped walnuts-2 oz.
1/4 c. roasted sunflower seeds-1 oz.
1 tsp. curry powder
1/2 tsp. vegetable salt (Mrs. Dash)
1 egg, lightly beaten
oil for frying
sharp cheddar cheese slices, or a vegan equivalent
8 pita rounds, 1 edge trimmed for filling
spicey mustard
3 tomatoes, chopped
2 avacados, peeled, pitted, and finely diced
1/2 bunch green leaf lettuce, chopped
creamy herbal dressing ( recipe to follow)

Directions:Directions: cont.
Combine beans, onion, parsley, nuts, sunflower seeds,
curry powder and vegetable salt in large bowl.
Add egg and mix well.
Form into 8 patties.
Pour oil into heavy, large skillet to a depth of 1/4 inch.
Place over medium-high heat.
When oil is hot, add patties (in batches if necessary)
and fry until lightly browned on each side, about 4 minutes per side.
Top with cheese while second side cooks.
Drain patties on paper towels.
Spread inside each pita with spicey mustard, lightly.
Place patty in each.
Add tomato, avacado, and lettuce.
Spoon dressing over filling.
Makes 8 servings. Can be frozen.

Dressing for Nutburgers in Pitas - pg 3
Ingredients: Directions:
1/2 c. mayonnaise
1/2 c. plain yogurt
2 Tbsp. finely chopped onion
2 Tbsp. finely chopped, fresh parsley
1/4 tsp. cider vinegar
1/4 tsp. fresh lemon juice
1/4 tsp. worchestershire sauce
1/4 tsp. vegetable salt
Combine all ingredients in blender or food processor and mix til smooth.
This also makes a great salad dressing!
