Brownie Mix Cookies by ShanaLee: from the IE |

| Ingredients: | Directions: |
|---|
1 pkg FUDGE BROWNIE MIX 1/3 cup VEGETABLE OIL 2 EGGS 1 cup VANILLA/WHITE CHOCOLATE CHIPS | Heat oven to 350F.
In large bowl, combine brownie mix, oil and eggs. By hand, stir until well-blended. Stir in chips.
Drop dough by rounded teaspoonfuls about 2" apart on ungreased baking sheets. Bake in heated oven for 8-12 minutes
or until set. Cool 1 min.; remove from baking sheets. Makes 3 dozen. |
The raw dough freezes very well -- I currently have 3 batches sitting in my freezer (I freeze them in logs,
wrapped tightly in saranwrap).
I do ALOT of variations with this. First, you can easily substitute any CAKE MIX for the brownie mix.
I'll do chocolate cake and use M&Ms instead of vanilla chips or chocolate chips. I also LOVE using SPICE CAKE mix
(by Duncan Hines), but leave out the chips/M&Ms -- instead, I dust the just-baked cookies with cinnamon sugar
(yummy!). |
