Porkers
Ingredients:Directions:
1 jar salsa (mild to hot, depending on your taste)
1 lb bulk pork sausage
6 english muffins, split and toasted
6 slices co-jack cheese
In a large bowl, thoroughly combine pork and 1/2 the jar of salsa's vegtables, not liquid
Form into 6 patties
Fry over medium heat until center is not pink
Top with cheese slice and let it melt slightly
Place on 1/2 of toasted muffin
Top with 2 T remaining salsa and other muffin half.

Koenigsburg Klops
Ingredients:Directions:
Meatballs:
1/2 lb ground pork
1/2 lb ground beef
1/3 c bread crumbs
salt and pepper, to taste
1 med chopped onion
3 beaten egg whites, reserving yolks for sauce*
*Make sure whites are added last*
Broth:
3 c water
1 finely chopped, med onion
4 bay leaves
1/2 t allspice
1 T sugar
peppercorns
Sauce:
1 T flour
3 beaten egg yolks, reserved from above
1/4 c vinegar
Capers
Meatballs:
Combine all ingredients except egg whites
When thoroughly combined, mix in beaten egg whites
Form into lg meatballs
Set aside
Broth:
Mix all ingredients in a lg stock pot
Boil for 30 minutes
Strain out peppercorns, bay leaves and onion pieces
Return to pot and add meatballs
Simmer meat in broth for 30 minutes
Remove meatballs to lg serving dish and cover in keep warm
Sauce:
Combine egg yolks and flour to make a rue
Add vinegar to broth
Stir rue into broth
Add 2 T drained capers to sauce
Pour over meatballs
Serve over mashed boiled potatoes, cooked rice or hot noodles

Stuffed Porkburgers
Ingredients:Directions:
1/2 C fresh mushrooms, chopped
1/4 C chopped green onion
1/4 t garlic powder
1 T margarine
1 1/2 lb ground pork
2 T worcestershire sauce
1 t ground mustard
1/2 t salt
1/2 t pepper
In lg skillet, sautee` mushrooms, green onions, and garlic powder in margarine until tender
Remove from heat
In a lg bowl, combine pork, Worcestershire, mustard, salt and pepper
Form into 8 patties
Spoon onion mixture into the center of 4 patties
Top with remaining 4 patties and pinch edges tightly shut
Broil burgers, turning once, until juices run clear
Serve on Kaiser rolls with red onion slices, lettuce and tomato to garnish

Luau Pork Roast
Ingredients:Directions:
1, 3-4 lb boneles pork shoulder roast, fat trimmed
4 T liquid smoke
4 t soy sauce
2, unpeeled ripe bananas
1/2 C water
Put the roast in center of a 22 X 18 in piece of heavy duty foil
Sprinkle with soy and liquid smoke
Wash bananas, skins on, and place around the base of the roast
Pull foil up to top of roast
Add water
Seal foil tightly
Wrap another lg piece of foil around the original foil
Refrigerate wrapped meat overnight in a shallow baking pan, turn several times
Place wrapped meat in roasting pan.
Bake at 400 degrees F for 1 hour
Reduce heat to 325 degrees and bake for 3 /12 hours
Drain liquid and discard along with bananas
Shred meat
Serves 8-10
