2 cups milk 4 T (1/2 stick) butter
4 T flour 1/2 cup grated parmesan or romano cheese Salt and freshly ground black pepper, to taste | In a
medium saucepan, heat the milk over medium heat until hot but not boiling. In a separate heavy saucepan, melt the butter
over medium heat. Sprinkle in the flour, stirring constantly to avoid lumps, for about 2-3 minutes. With a wire whisk
or wooden spoon, gradually stir the hot milk into the flour & butter paste. Raise the heat slightly and bring the
mixture to a boil, stirring constantly. Reduce the heat and simmer 5 minutes more, stirring in parmesan or romano as the
sauce begins to thicken. Taste the sauce & add salt & white pepper to taste. Continue simmering until the sauce has
a thick consistency and coats the spoon. Serve over pasta. Makes 8 servings. |
