CRUST: 1 recipe of your favorite Pizza Dough TOPPING: 2 avocados 1 tablespoon lemon juice

12 oz crabmeat, thawed if frozen, drained 1/2 cup shredded Gruyere cheese avocado slices with tomato, to garnish

Preheat oven to 425F (220C). Punch down dough and knead briefly. Roll out dough and use to line a 14" x 10" jellyroll
pan. Make topping. Halve avocados; remove stones. Scoop out flesh and chop coarsely. Place in a bowl with
lemon juice and stir lightly to coat. Set aside. Melt butter in a saucepan. Stir in flour and cook for 2 minutes.
Stir in milk; bring to a boil. Reduce heat; simmer 2 minutes. Season to taste with salt and pepper and
cayenne. Remove pan from heat. Stir in crab, cheese, and chopped avocado. Spread over the dough,
then bake 20 minutes until crust is golden. Cool slightly before cutting into strips or squares.
Garnish with avocado slices and tomato. Makes 6 servings. |
