Avocado & Crab Bites
Ingredients:Directions:
CRUST:
1 recipe of your favorite Pizza Dough
TOPPING:
2 avocados
1 tablespoon lemon juice
1/4 cup butter
1/2 cup all-purpose flour
1 1/4 cups milk
salt
pepper
1/4 teaspoon cayenne pepper
12 oz crabmeat, thawed if frozen, drained
1/2 cup shredded Gruyere cheese
avocado slices with tomato, to garnish
Preheat oven to 425F (220C).
Punch down dough and knead briefly.
Roll out dough and use to line a 14" x 10" jellyroll pan.
Make topping.
Halve avocados; remove stones.
Scoop out flesh and chop coarsely.
Place in a bowl with lemon juice and stir lightly to coat.
Set aside.
Melt butter in a saucepan.
Stir in flour and cook for 2 minutes.
Stir in milk; bring to a boil.
Reduce heat; simmer 2 minutes.
Season to taste with salt and pepper and cayenne.
Remove pan from heat.
Stir in crab, cheese, and chopped avocado.
Spread over the dough, then bake 20 minutes until crust is golden.
Cool slightly before cutting into strips or squares.
Garnish with avocado slices and tomato.
Makes 6 servings.

Tuna Burgers
Ingredients:Directions:
2, 6 oz cans drained and flaked tuna
2 eggs
1 c Italian seasoned bread crumbs
2/3 c finely chopped onion
1/2 c chopped celery
1/2 c chopped sweet red pepper
1/2 c mayonnaise
4 T chili sauce
1 t dillweed
1/2 t salt
1/4 t pepper
dash of hot pepper sauce
dash of worcestershire sauce
8 buns, split
sliced tomatoes (opt.)
lettuce leaves (opt.)
Combine all ingredients up to buns in lg bowl
Form into 8 patties
Coat heated skillet with cooking spray or oil
Cook patties on each side for 3-4 minutes or until warmed through
Serve on buns and garnish with tomatoes and lettuce

Aunt Ruth's Crab Louis
Ingredients:Directions:
Salad Dressing*
*(see recipe below)
4 C bite-sized pieces of head lettuce or salad greens
2 C cooked, chopped crab meat**
**(may substitute 2, 6 1/2 oz canned crab or thawed imitation crab meat)
4 med tomatoes cut into quarters
4 hard-cooked eggs, peeled and cut into quarters
Black or pimento-stuffed olives, drained (optional)
Prepare dressing in following recipe
Divide salad greens equally between 4 salad plates/bowls
Arrange crab meat, eggs, tomatoes and olives (optional) on top of the greens
Pour dressing over salad

Aunt Ruth's Crab Louis Dressing
Ingredients:Directions:
1, 12 oz jar chile sauce
1/4 C finely chopped celery
1/4 C finely chopped sour pickles*
*(may substitute 1/4 C pickle relish and 1 t dill weed)
1/2 t garlic powder
1 1/2 C mayonnaise
1 t lemon juice
1/2 t Worcestershire sauce
1 t horseradish
In med bowl, combine all ingredients
Mix thoroughly
Makes 1 qt
