Porcupine Meatballs :ROD Exchange
Ingredients: Directions:
1/2 cup uncooked long grain rice
1/2 cup water
1/3 cup chopped onion
1 teaspoon salt
1/2 teaspoon celery salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
1 pound ground beef
2 tablespoons cooking oil
1 can (15 ounces) tomato sauce
1 cup water
2 tablespoons light brown sugar
2 teaspoons Worcestershire sauce
In a bowl, combine the first seven ingredients.
Add beef and mix well.
Shape into 1 1/2 in. balls.
In a large skillet, brown meatballs in oil; drain.
Combine tomato sauce, water, brown
sugar and Worcestershire sauce;
pour over meatballs.
Reduce heat; cover and simmer for 1 hour.

Beef Stroganoff -June-Rae:ROD Exchange
Ingredients: Directions:
2 lbs stew meat
1/2 C flour
1 t salt
1/4 C salad oil
1 t paprika
3/4 C chopped onion
1-1/2 cans consomme
2 small cans mushrooms
1 can water
1 bay leaf
3/4 t thyme
3/4 t oregano
1-1/2 C sour cream
3 T cooking sherry
Cut the meat into bite size pieces.
Shake in a sack with flour, salt and paprika.
Brown meat in oil.
Add the onion and cook slowly until tender.
Add consomme, water and herbs.
Simmer covered for 45 minutes.
Add more water if necessary.
Add sherry.
Just before serving,
stir in the mushrooms and sour cream.
Serve over cooked egg noodles.
(Serve with crusty rolls and tossed salad)

All Day-Long Crockpot Beef:ROD Exchange
Ingredients:Directions:
1 1/2 lb beef roast (any cut will do)
1/2 teaspoon black pepper
2 garlic cloves, minced
1/2 package onion soup mix
2 teaspoons Worcestershire sauce
1 teaspoon steak sauce
3 carrots , sliced
2 celery stalks, diced
1 green bell pepper, chopped
1 yellow onion
1/2 cup water
1/2 cup tomato juice
Cut beef roast into serving sized portions.
Use more beef if you need more than 6 servings.
Brown beef in a bit of vegetable oil,
although you can skipthis step if rushed for time.
Slice onion and separate into rings.
Dice the peeled carrots and celery
slice the peppers into thin strips or rings.
Place these into bottom of crockpot.
Sprinkle the beef pieces with fresh ground
black pepper, minced garlic, and the onion soup mix.
Place on top of the vegetables.
Mix the steak sauce and Worcestershire sauce
in a small bowl with about 1/2 cup water and 1/2 cup tomato juice.
Pour this over the meat.
Turn the crockpot to high for 30 minutes.
Turn to low, cover and cook for 7-9 hours.
When ready to serve, remove meat and vegetables
out of pot with a slotted spoon.
Use the liquid as is or turn crockpot to high and thicken liquid
with a little flour or cornstarch.

Philly Cheesesteak -Jeanne:ROD Exchange
Ingredients:Directions:
1 thin "chipped" steak
(It is similar to a round steak but sliced very thin.)
Butter or oil (for frying)
Cheese of your choice
... American, Swiss, Provolone, and Cheez Whiz are used all of the time.
mushrooms and onions, sliced thin for sauteeing
Cut the chipped steak into thin pieces.
Fry in butter or oil.
Set aside.
Sautee onions and mushrooms in same pan.
Top steak with cheese, fried onions, mushrooms on a great hard or Italian roll.
You've got yourself one heck of a sandwich...yum!
