My Mother's Fried Chicken

I don't know why this tastes so good, but it does! (my mother was a professional cook, but used no recipes!)
Heat oil in skilit (one that has a lid) until flour sprinkled in it bubbles. Do not put chicken in skillet until the flour bubbles . . .
While the oil heats, get a bowl large enough to put a piece of chicken in, and fill it with flour, Mrs. Dash table formula, pepper. Stir it all with a fork.
Trim chicken of major fatty parts, such as around the thigh and breast. Coat chicken with this flour mixture, and place in hot oil. Cover (using a lid that allows steam to escape is best, for crisper chicken), let cook on a low-med heat for 15 minutes. Turn chicken ONCE, only! Cook on second side 15 minutes . . .
