Baklava

2 c. sweet butter

1lb. Phyllo leaves or sheets

1 lb. Walnuts finely chopped

1 tsp. Cinnamon

5 T. sugar

dash of cloves

Lay 10-12 phyllo sheets in baking pan brushing every second sheet evenly with melted butter. Keep remaining sheets moist (covered well). Mix walnuts, cinnamon, sugar, and cloves and spread 1/3 of it over top of phyllo sheets. Spread melted butter on 5 or 6 more sheets and lay on top of nut mixture. Add another 1/3 of nut mixture, then another layer of sheets, brushing them with butter. Top with remaining nut mixture, lay all remaining sheets on top brushing every 2nd sheet with butter. Cut into diamond shapes.

Heat remaining butter (approx. ½ cup) until it starts to brown. Pour over baklava. Sprinkle top with a few drops of cold water, and bake at 350 degrees for 30 min. Reduce temprature to 300 degrees and bake 1 hour more. Remove from oven and pour cool syrup over pastry.

Syrup:

¾ c. sugar

¾ c. honey

2 c. water

juice of ½ lemon

Boil in saucepan for 20 min. Allow to cool before pouring over baked Baklava

This pastry is a little time consuming, but well worth the effort. Its my favorite!!
