Report of Assessment Findings for Intended Outcome # 2

Assessment Criteria/Expected Results: at least 80 percent of students will answer each embedded question correctly on the final examination.

Statement of Actual Results: expected results were met except for the embedded questions #1 and 4.

Problems Encountered (if minimum standards were not met): the embedded question #1 is related to freezing process, and the embedded question number 4 is related to water activity. The students did not understand the freezing process and water activity in a satisfactory level.

Actions Taken (such as curricular changes or improvements)/Recommendations for Further Action: freezing process should be included in Hot Topic. More lecture time is required for water activity. Coordinate with other instructor to emphasize more on water activity in their classes (such as Food Chemistry, Food Microbiology classes).
