Shepard's Pie
Shepard's Pie
Approx. 2-4 servings
1 pound ground beef (I prefer extra lean for this dish)
1 can of cream of mushroom soup
1 onion
a handful of two of frozen peas and corn (or carrots, whatever you're in the mood for)
1 scant tablespoon oil (olive is good)
5 cups mashed potatoes, approx 4 large potatoes if making from scratch
1 tablespoon butter
Preheat oven to 350 and prepare mashed potatoes
Saute onion in olive oil
When onion is translucent, add ground beef and brown
Add soup, frozen vegetables, and any other seasoning (such as salt and black pepper to taste)
Place meat mixture in the bottom of an overproof casserole, cover with mashed potatoes, and dot with butter
Bake at 350 until top is browing and bubbly
(approx. 20 minutes)
