At first glance, the Ultimate Insect family is worthless. And in many ways...it is. They simply reduce the attack of monsters by the amount of their level, and they only do this if they were summoned by the effect of the previous level. So that means if you summon LV5 by sacrificing, you won't get the reduction.
Ultimate Insect LV 1 I don't even bother with. It's unaffected by Spell cards, which leads you to believe that the rest of this line will have equally awesome effects. When you reach LV 3 you are sorely mistaken. It gives an attack reduction of 300 for all your opponent's monsters as long as it's face up on the field. Yay. If it's on the field during your Standby Phase, you can sacrifice it for LV 5.
In the past, the LV 5/6 monsters have often been awesome. This one, however, is not so awesome. Reduce the attack of your opponent's monsters by 500 as long as it's face up. Yay. This thing only needs to exist for a Standby Phase in order to get LV 7 out though, so there's a plus.
LV 7 is absolutely worthless compared to other max LV monsters. True, it's not a nomi; you can sacrifice for it or bring it out through Pinch Hopper, so there's a BIG plus. But the effect is nowhere's NEAR gamebreaking. Reduce the attack and defense of opponent's monsters by 700 as long as it's face up. Woo. Yay. Couldn't they have given it Magic protection or something?
However, you need to look at the Ultimate Insect line not as a Level family, but as a Metamorphosis family. 5* and 7* Fusions are some of the best out there (Balter, Last Warrior, etc.), and this family has both levels to be morphed. This is what I think the Ultimate Insect family was made for - Metamorphosis - because the effects certainly are lacking.
This deck uses some interesting cards; Insect Imitation allows you to sacrifice a Pinch Hopper for LV5 from your deck, then summon another Bug from your hand (maybe LV 7). You could then morph LV5 into a Dark Balter, giving you a 2600 beatstick protected by Dark Balter. Now, if only they got their reduction effects by any means, instead of just by Leveling Up =/
