"Mustard & Turnip"

1 big bundle mustard greens
1 big bundle turnip greens with roots
1/4 lb. salt pork

Cut or strip greens off stems. Wash them very well, at least 3 times. Drain in a colander and set aside.
Wash and peel the turnip roots. Cut into pieces and set aside with the greens.
Add the salt pork to a large pot and add 1 to 2 quarts water, depending on many greens you have. Bring to a boil.
Add the greens and turnips a few at a time, until they have wilted enough to get them all in the pot.
Boil greens on medium for about 1 hour. You can also simmer them on low all afternoon, the longer they cook, the better they are.
Salt and pepper to taste.


In our house we like to steam our vegetables .As you don't loose a lot of the vitamins.

Steaming Vegetables

A steamer with a built-in timer is the best way to cook vegetables. Most people when boiling their vegetables, throw away the best part—the cooking water. Steaming vegetables conserves the maximum amount of nutrients by subjecting the vegetables to the least amount of heat. Cut your vegetables into small pieces for quicker steaming.

45 MINUTES Beets, carrots turnips, squash and artichokes

25 MINUTES Sweet potatoes, broccoli stalks, green beans, peas, parsnips, celery

15 MINUTES Garlic and cabbage, sweet peppers, cauliflower, onions, asparagus

7 MINUTES Mushrooms, broccoli tips, asparagus tips, zucchini

Add a dab of butter, your favorite seasoning & they are delicious.......

One of my favorite ways to cook veggies (besides steaming) is to individually wrap them. We did this at a cooking school I attended.
One Pork chop (or chicken or sirloin patty) one baking potato cut in wedges slice of onion a few baby carrots one or two slices of tomato a strip of bell pepper (I like to use a pod of hot pepper) salt and pepper to taste (other seasoning if desired) wrap individually in foil squares . Just fold the foil over and tighten the ends well so that the steam will not get out. Make up as many as you need for serving and place on baking pan and bake at 400 degrees for about an hour until meat is well done. Place on plate and unwrap. serve with hot rolls and a favorite salad You can use any veggies that you like. I like recipes that you do to your own taste. The tomato is wonderful in it though.



Onion Pie

1 sleeve of Saltines crushed 1 stick melted butter Mix and press into 9 inch pie pan 2 1/2 cups sauted onions 6 oz grated cheddar cheese Spread on top of crust 1 1/2 cups scalded milk 3 eggs slightly beaten Add some scalded milk to eggs. Then stir into rest of milk. Pour over cheese and onions. Bake at 325 for 1 hour. This really is good! Enjoy
