JUST COOKIES

Jelly-Nut Cookies
Ingredients:
1 cup butter
1/2 cup sugar
2 eggs-seperated
2 cups + 2 tablespoon all purpose flour
1 teaspoon vanilla
finely chopped nuts
preserves of choice

Procedure:

Cream butter, add sugar and egg yolks and beat.
Add flour. Make into 1" balls and roll in egg whites then in the nuts.
Place on ungreased cookie sheet and press hole in center with thumb.
Fill with preserves of choice. Bake at 350 degrees for 15-20 minutes.


Peanut Butter Crunch Cookies
Ingredients:
1/2 cup butter
1/2 cup chunky peanut butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 egg-beaten
1 1/2 cup all purpose flour
1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt.

Procedure:

Cream butter and peanut butter; gradually add sugar,
beating until light and fluffy. add egg; beat well.
Sift together flour, baking powder,soda, and salt in a medium mixing bowl.
Add to creamed mixture; mix well. Shape dough into 3/4-inch balls;
place 3 inches apart on ungreased cookie sheets.
Gently flatten with a fork dipped in flour.
Bake at 375 degrees for 10 to 12 minutes.
Remove to wire racks to cool. Yield: 4 Dozen


Chocolate-Chip Cookies
Ingredients:
1 cup margarine or butter
1 cup sugar
1/2 cup brown sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 teaspoon soda
1-1/2 teaspoon salt
One 12 ounce package chocolate chips

Procedure:

Cream butter and sugars in a large bowl.
Add eggs and vanilla, mix well.
Add dry ingredients. Stir in chocolate chips.
Drop teaspoonfuls onto greased cookie sheet.
Bake at 350 degrees for 10 to 12 minutes.
Makes 6 dozens.


Oatmeal Cookies
Ingredients:
1 cup (two sticks) butter, softened
1 cup brown sugar, firmly packed
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oats
1 cup raisins (proofed)
1 cup finely chopped pecans
3/4 cup coconut

Procedure:

Preheat oven to 350 degrees
Beat together butter and sugars until creamy
Add eggs and vanilla, beating well
Add flour, baking soda, cinnamon and salt, mix well
Stir in oats, raisins, pecans, and coconut
Drop by rounded tablespoonfuls onto cookie sheet
Bake 10 to 12 mins
Makes about 5 dozen


Secret Kiss Cookies
Ingredients:
1-cup margarine, softened
1/2-cup sugar
1-teaspoon vanilla
1 3/4-cups unsifted flour
1-cup finely chopped walnuts
1-6 ounce package Hersey's kisses(36)
Powdered sugar

Procedure:

Cream together margarine, sugar and vanilla in large bowl.
Gradually add flour and nuts.
Beat on low speed until well blended.
Chill about one hour.
Heat oven to 375 degrees.
Mold approximately 1 Tablespoon of dough
around an unwrapped Hersey's kiss,
roll to make a ball,
being sure to cover kiss completely.
Place on ungreased cookie sheet and bake 12 minutes
or until cookies are set, but not brown.
Cool slightly; remove to wire rack while still warm,
roll in powdered sugar.
Cool.
Store in air tight container.
Roll in sugar again before serving, if desired.
Makes 36 cookies
