Nobody can make a Pecan Pie like people who were born and raised in the South! I've been fortunate enough to have such people as my friends, and after having been taught the "basics" have perfected "my" own versions of this Southern Holiday Tradition, listed here is one of my several different ways. I don't know if my versions are as good, but I haven't had any complaint's yet, and since every one always wants "more" it must be fairly good... however, after you've tried it, you be the critique (smile).


Elia's Southern Pecan Pie

3 Eggs, lightly beaten

1 Cup of sugar

1 Cup of "light" corn syrup

3 Tbsp. of butter

1 Tsp. of vanilla

1 1/2 Cups of broken pecans

1 Unbaked 9-inch pie shell (recipie for this is listed below

10 or 15 Pecan halves


For 1 9-Inch Pie Shell

Combine 1 1/3 cups of sifted all-purpose flour. and 1/2 tsp. of salt in a mixing bowl. Cut in 1/2 cup of shortening until uniform but coarse. Sprinkle on 3 Tbsp. of cold water. Mix with a fork until you can shape the mixture into a ball. Roll out to fit a 9-inch pie pan. Place this in the pan and then trim and flute the edges.

Now Mix together eggs, sugar, corn syrup, butter, vanilla and the pecan pieces. Pour the filling into the prepared pie shell. Arrange the pecan halves sround the inside edge. Bake in the oven at 400 defrees for about 10 minutes, then reduce the heat to 350 degrees and bake for another 40 minutes or until the center is firm. Let the pie cool to room temperature before cutting.


Note: This Pecan Pie tastes "better" when it is served at room temperature or at least slightly warm.




Quick Milk Chocolate Fudge

1 Pkg, 12 0z. of milk chocolate chips

1 Cup of sweetened condensed milk, recipe is listed below, or you can use the kind in a can

3 Tbsp. of margarine or butter

1 Tsp. of vanilla extract, you can also use imitation vanilla

1 Cup of chopped walnuts



For Sweetened Condensed Milk:
Heat 3/4 cup of sugar and 1/3 cup of water until sugar has dissolved. Add 1/4 cup of margarine or butter. Stir until butter is melted. Heat this to a boil. Put 1 cup of nonfat dry powdered milk into a blender or food processor with steel blade in place. Process or blend until smooth while adding margarine or butter mixture. Cool. Cover and refrigerate or use right away to make the fudge.

Put chocolate chips in top of double boiler. Place over hot, Not boiling, water. Stir until melted. Add condensed milk, margarine and vanilla. Blend until margarine is mixed into the chocolate, then stir in the nuts. Spread into lightly oiled 4x8 inch loaf pan or 8-inch square pan. Cool until set and firm then cut into squares.

This will make about 1 1/2 Lbs. of Fudge
