Dragons are nothing more than dinosaurs, most dragons where depicted as being large,
flightless reptillian sorts of creatures. If you look at artwork from the dark ages, almost all
dragons don't have wings, only a few do.

Perhaps these "dragons" where said to breath fire becasue a few species of dinosauri
where capable of spitting a debilitating, burning, secretion. Most likely a strong acid, but
perhaps a base solution would have done just the same. Very similar to spitting snakes
which have survived until the present.
The film "Jurassic Park" depicted dinosaure with such abilities and it may not be that far
fetched.

Obviously such large beasts would pose a threat to developing man and therefor a mass
war/extinction probably continued throughout the dark ages. Quite effectively explaing
why there are no dragons or dinosaurs alive today.
