Grilled Shrimp

Serving Size: 4-6

Ingredients

 

2 lbs medium shrimp

1/2 cup teriyaki sauce

1/2 cup jardin chipotle salsa

juice from 1/2 lime

1 teaspoon jerk seasoning

1 teaspoon garlic powder

1/4 cup olive oil 

1/2 teaspoon meat tenderizer

1 teaspoon Cavender's Greek Seasoning

1 pinch salt

1/2 teaspoon crushed pepper

Grated Parmesan cheese

Wooden skewers

 

Head and peel shrimp, butterfly them, removing the shrimp veins.  Wash thoroughly.

 

Combine shrimp and all ingredients (except Parmesan cheese) in a suitable container with a lid.   Shake until mixed thoroughly.  Refrigerate and allow to marinate for at least one hour.  Optimum results are reached after about 4 hours of marination.  Soak skewers in water before use to prevent fire.  Place shrimp on wooden skewers.

 

Preheat BBQ pit to medium heat.  BBQ shrimp for approximately 20 minutes, turning frequently, basting shrimp with marinade after each turn.  Just before removing shrimp, sprinkle with Parmesan cheese.  Serve immediately.

 

For some extra kick, you can wrap the shrimp in pepper bacon before grilling!
